Nougat recipe

Nougat is a traditional delicacy, originally known in all the countries around the Mediterranean and the Middle East.

Since nuts and honey are abundant overthere, they are the essential ingredients in any nougat, worthy of the name.

Many types of nougat can be found, often produced by the descendants of Spanish and Italian families who emigrated and brought their recipes with them to their new home. Nougat is therefore the symbol of travelling, of migration, and also: of living together, because people prefer to share nougat.

In France, the typical Montélimar almond nougat was created after Olivier de Serres planted the first almond trees in the Ardèche region.

However, the origin of nougat is much older: historical traces have been found as far back as the Byzantine Empire (from late Antiquity to the Middle Ages). More precisely in Isfahan, the first nougat was probably made.

Today, as the only Maître Nougatier in the Benelux, we have been manufacturing our artisanal nougat for almost a hundred years, cooked in copper kettles. This is the only real way to achieve the unique taste of real quality nougat.

When the sugar and honey have reached their exact boiling temperature, the syrup is added to the neatly whipped egg whites in a slow and fine stream. This is how we obtain the unique texture of our traditional nougat. This method can only be learned in the company and is the result of patience and attention.

After the syrup of honey and sugar, together with the egg whites have been sufficiently mixed and kneeded, the almonds and pistachios are added, followed by a pinch of vanilla. This is the unique formula of real nougat.

After the necessary hours of rest, the soft nougat is cut according to the customer's wishes, automated where possible. Hard nougat is chopped into ready-to-taste pieces or grinded and sieved into granules for chocolates and other sweet applications.

After a minimum of 12 hours, the nougat is finally packed airtight, with a shelf life of 18 months.
